I feel like if you are playing solo, you lose 95% of the time against galleons. Sailing the ships of sea of thieves is a job unto itself, requiring an understanding of how the ships work, and can be dangerous if you mess it up. If you want to lose a galleon, you sail into the wind, find some rocks and islands and maneuver through them. They are also narrow which allows for some winding into rocks and shoals where a galleon can't follow.
